I don't think it's possible to tell the gender of a reptile embryo from the outside of the egg. And I do not know about lizards, but chicken and other bird embryos will die if the egg is subjected to vibrations or is jolted at certain times.
I expect if they took eggs, it's a pretty safe bet they were for eating.
