Fertilizer, required for any colonization effort. The martian atmosphere contains 2.7% N2, so it is available. React it with H2 from the water electrolysis and you have ammonia, which is not only good for fertilizer, it is an easier rocket fuel to handle than liquid hydrogen. Remember the X-15? LOX-Ammonia rocket engine.
