Like most critters, they are what they eat. I remember seeing it written somewhere that the eucalypts on which they browse contain notable quantities of terpenoids and terpenes. These are lipid soluble, and permeate the fatty tissues and meat of the Koalas. If you want a good approximation of what they taste like, imagine marinating your meat in tea tree oil or terpentine. Taste the stuff. I don't think you'll want to promote them as gourmet meat. From what I remember of what I've read, the early settlers in Australia wouldn't eat them because of the taste; that's probably why they've survived so far.
