another factor in the info that the French do not have as high a rate of heart disease as others may be that the French do not usually eat as much red meat as others.
in my reading of French cookbooks, a serving of meat is usually about the size of a pack of cards.
when i used to go to restaurants, a serving of meat was a pound of beef, or such. in private homes where meat was served the portion was usually larger than a paperback book, and more than one serving was eaten by some people.
maybe the amount of meat consumed is more significant than the fact of wine drinking.
ps. i am not a vegetarian :)
