About the only untestable assumption that science makes is that things behave the same way when they are not being observed as when they are being observed. Everything else is testable. This is not the same thing as being provable. But, there is a big difference between science, where assumptions are repeatedly tested and tossed out when they fail, and religion, which is untestable to the best of my understanding.
