Sean Carroll on his Preposterous Universe Blog has a report of the right way to do hot dogs. Against Aioli
I'm with Sean. I haven't had a hot dog with Aioli, but I think that too many places are going way overboard on shoving too many things onto normal food. They can't figure out that the reason we like hot dogs and hamburgers and what have you is because they are good the way they have always been. There is no need to add mountains of other stuff to them. Adding stuff most often just confuses the flavor.

I am very surprised that you have not been swamped with supporters after this post Bill! Aioli is on everything savoury now, and I really dislike it. Recently I had a splendid looking chicken roll completely ruined by great blobs of aioli, and when I very politely complained I was told everyone loves aioli and so its added automatically, without asking.

I now interrogate wait persons regarding sandwich contents, and sometimes it is hard to get them to vary the ingredients and achieve aioli-free! Salt and pepper is enough, any thing else is too much flavour, and, as you say, confusing.

Maybe it's the umami (sp) thing! And they want to be trendy.
